BITTER GUARD KOOTU(PICKLE)

INGREDIENTS
1)5 short red chillies,5 long red chillies
2)1 n 1/2 tbsp grated coconut
3)2 tsp coriander seeds
4)1 tsp mustard seeds
5)1/4 tsp methi seeds
6)heeng(if u r using jam type then 1 n 1/2 black grape size)
7)tamarind black grape size
8) 4-5 bitter guards
9)turmeric powder 1/2 tsp...nd salt...

METHOD
1)Chop bitter guard nd apply little salt  nd after one hour or so squeez it to remove bitter water n if possible, keep this in the sunlight to facilitate the frying process faster...for 2-3 days nd shallow fry this in by heating 1-2 tsp oil on low flame...nd keep aside to cool...
2)dry roast grated coconut with turmeric powder till golden brown...
3)roast chillies, coriander seeds,methi seeds,mustard seeds,heeng seperately in a little oil on a medium flame
4)grind roasted gratings,chillies n tamarind coresly ,to this add roasted spices nd tamarind  nd grind again to a paste...add fried bitter guard n salt to taste...season this with mustard seeds...
